Ingredients

1/3 cup diced onions

1 large potato, chopped

1 cup beef or chicken stock

2 cups cooked winter squash

salt and pepper

3/4 tsp curry powder

3/4 cup milk

Paprika

Preparation

Saute the onions in butter until soft. Add the potato, stock, squash, salt, pepper and curry powder. Simmer for 10 minutes, or until potato is tender. Blend in the milk. Sprinkle with paprika.

For a little luxury, add a spoonful of yogurt to each serving. Serves 4.
