Ingredients

4 cups cooked Butternut squash, mashed

1 Tbs. olive oil

1 cup chopped onion

1-1/2 cups chopped mixed red & green peppers

1-2 Tbs minced garlic

1 tsp. ground cumin

1/2 tsp. ground coriander

1/2 tsp. chili powder

1/4 tsp. cayenne

1/4 tsp. freshly ground black pepper

1 tsp. coarse sea salt

2 cups sweet corn, fresh or frozen

4 beaten eggs

1 cup grated very sharp cheddar

Preparation

  1. Saute onions in olive oil until translucent, add spices and garlic. Add peppers and salt. Cover & cook 5 minutes.
  2. Add saute to mashed squash, along with corn and beaten eggs. Mix well.
  3. Spread into a buttered 2-quart casserole and top with cheese.

Bake in 350 degree oven, 20 minutes, covered; 15 minutes, uncovered.
