Ingredients
3 lbs yellow squash
1 chopped sweet onion
1 cup of stuffing mix (divided in 1/2)
2 eggs
1 stick of margarine (cut in 1/2)
salt
pepper
Preparation
Preheat oven to 375 degrees. Slice squash and chop onion. Place in pot along with 2 cups of water, salt/pepper and bring it to a boil. Turn heat down and let it cook for 5 to 8 minutes more. Drain squash and onion, then return it to the pan. In pan, add 1/2 cup of stuffing mix, 1/2 stick of butter and 2 eggs. Stir thoroughly. Using a Pam sprayed 9 x 13 pan, pour mixture in pan and top with 1/2 cup of stuffing mix. Melt the other 1/2 of margarine and pour over top of casserole. Bake in oven for 20 minutes or until bubbly and golden brown.
