Ingredients
2 pounds fresh squash (zucchini and yellow) grated
1 medium onion, chopped
1/2 stick of butter, melted
1 cup Ritz crackers, crushed
2 cups cheddar cheese, grate
1 egg
1/2 cup milk
salt and pepper to taste
Preparation
Beat eggs with milk. Combine all the ingredients. Pour into a 2 quart casserole and bake at 350 degrees for 45 minutes until set and edges are brown.
