Ingredients

-3 lbs yellow squash, sliced

-1/2 C chopped onion

-1 C shredded sharp cheddar cheese

-2 eggs, lightly beaten

-1/4 C mayonnaise

-2 t sugar

-1 t salt

-Ritz crackers, crushed

Preparation

  1. Boil squash and onion (until slightly tender), drain and place in baking dish
  2. In a separate bowl, combine cheese, eggs, mayonnaise, sugar and salt, then pour over squash
  3. Crumble crackers on top, then top with pats of butter
  4. Bake at 375º for 15-20 minutes
