Ingredients
1 3/4 lb sliced squash or zucchini
1 medium onion - chopped
1 Cup cream of chicken soup
8 oz sour cream
1 Cup shredded carrots
8 oz box seasoned stuffing mix
Preparation
Cook squash & onion & 1/2 tsp salt in 2 Cups boiling water for 3-4 min. Drain
In bowl combine soup, sour cream, carrots and spices from envelop
Fold squash into this mixture and combine with butter
Spread 2/3 of this onto bottom of 9x13" pan
Top with squash mixture and a thin layer of remaining stuffing.
Bake uncovered at 350 for 30 min
