Ingredients
1 Tbls extra virgin olive oil
1-2 Onions, chopped
1/2 tsp sea-salt (or celery salt)
2 cups dried split peas
5 cups water
1/2 tsp lemon juice
Bacon (however much you want)
Preparation
Chop onions and cut bacon into bits. Add olive oil to an appropriate size pot. Stir in onions, bacon and salt. I also added a pinch of garlic salt. Cook until onions are transparent and bacon is fully cooked. Add peas and water. Bring to boil, turn down heat and let simmer for 20 min or until peas are cooked. Turn off heat, with a ladle or cup, spoon out half of the mixture. Using mixer or blender, puree half of the mixture. Pour the puree into the other mixture. Taste test and if more salt is needed then add to taste.
If desired, serve with a drizzle of olive oil and a pinch of paprika.
