Ingredients
1 lb split peas (2 1/2 cups)
3 qts water
1 small ham shank
1/4 t dried onions
2 chicken boullion cubes
1 bay leaf
sprinkle of pepper
1 1/2 c thinly sliced carrots
1 c chopped celery
Preparation
In large pot, combine peas, water, ham, onion, boullion and seasonings. Simmer uncovered 1 1/2 hours Remove ham shank, return meat to pot. Stir in carrots and celery. Simmer 2 1/2 hours till desired thickness. Makes 6-1 1/2 servings.
