Ingredients
1 Bunch spinich
1/2 Cup thinly sliced red onion.
1/4 Cup feta cheese
1 TSB Red wine vinegar
1/4 TSP dried oregano
1 Small galic clove minced
1/8 TSP salt or to taste
3 TBS olive oil
Coarsley ground black pepper to taste
Preparation
Remove and discard stems from spinich. Place spinich in salad bowl with onion and feta cheese. In small bowl combine vinegar, oregano, salt, and garlic. In a small pan heat oil over medium heat until warm but not smoking. Gradually beat vinegar mixture into oil. Qickly add dressing to salad amd tossing lightly.
