Ingredients
1 pound ground turkey
1 medium chopped onion
1 box frozen spinach
1 can chopped green chiles, undrained
1/2 teaspoon cumin
1/2 teaspoon garlic-pepper
1/2 cup light sour cream
3/4 cup shredded Monterey Jack
1 can enchilada sauce
8 8" flour tortillas
1 medium tomato, chopped
Preparation
- Heat oven to 350. Spray 13 x 9 baking dish with cooking spray. Saute turkey and onion over medium-high heat 5-7 minutes.
- Stir in spinach and stir until thawed. Stir in green chiles, cumin, garlic-pepper, sour cream, and 1/4 cup of cheese.
- Spread about 1 teaspoon enchilada sauce on each tortilla. Top with 1/2 cup turkey mixture. Roll up; place seam side down in baking dish. In small bowl, mix remaining enchilada sauce and tomato. spoon over enchiladas. Sprinkle with remaining cheese.
- Cover pan with foil and bake 40-45 minutes until thoroughly heated.
