Ingredients
1 Tablespoon Olive Oil
Small Onion finely chopped
½ tsp. Basil & Oregano
pinch crushed red pepper
1 28 oz can Crushed Tomatoes
1 package frozen spinach, thawed, squeezed dry and roughly chopped
1 ½ pint Light Cream or Whipping Cream
Chicken Broth to thin soup
Salt & Pepper to taste
Preparation
Sauté onion, add spices and tomatoes, simmer a few minutes. Add spinach and cream. Stir in chicken broth to thin to soup consistency. Simmer until hot - do not boil soup.
