Ingredients
1 package chopped frozen spinach, defrosted and drained (squeeze in hands until all water is gone)
1 stick of butter (melted)
2 eggs (beaten)
8 oz. shredded white cheddar cheese
1 cup plus one tablespoon flour
1 teaspoon baking powder
1 cup milk
1 teaspoon salt
½ cup finely chopped onions (a small/med size onion)
Preparation
Preheat oven to 350. Sift flour, baking powder, and salt together. Add beaten eggs, spinach, onions, milk, melted butter and cheese. Mix well. Pour into a greased pan (I use a glass pyrex-size you would use for brownies) and spread evenly. Cook at 350 for 30-35 min until browned on top. Cut into squares and enjoy! Best when eaten right away, but can be made in advance and reheated in the oven or microwave.
