Ingredients

1 T. olive oil

5 oz. (8 loosely packed cups) baby spinach leaves

6 eggs

6 T. all purpose white flour

2 c. cottage cheese

2 c. cheddar cheese

2 T. melted butter

1/2 tsp. salt

1/4 tsp. fresh ground pepper

Preparation

  1. Pre-heat oven to 350 degrees, lightly oil a 9 inch pie plate.
  2. Heat the oil in a large skillet and saute spinach just until it wilts (about 20 seconds), set aside.
  3. Lightly beat eggs in a med. bowl. Add the flour one T. at a time. Add remaining ingredients and mix well. Mix in the spinach. Transfer mixture to prepared pie plate. Bake 1 hour until set and lightly browned.
  4. Cool 15 min. before serving.
