Ingredients
1 lb Spicy Italian Sausage
1 onion, sliced
2 cups tomato sauce
15 - 18 oz cooked greens
2 cups ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, beaten
2 cups shredded mozzarella cheese
Preparation
- Brown sausage in skillet over medium heat. Remove to drain fat, cook onion in drippings, then stir in tomato sauce. Set mixture aside.
- Preheat Oven to 350 degrees F
- Parboil greens in boiling water, let cool, drain water and chop
- In large bowl, combine egg, ricotta, Parmesan and chopped greens. Spread over bottom of 9x13 in baking dish. Spoon sausage mixture over spinach mixture, then top with mozzarella cheese.
- Bank in oven for 40 minutes, or until cheese is bubbly and brown.
