Ingredients

2 tablespoons malt vinegar

2 teaspoons Dijon mustard

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

3/4 cup olive oil

12 ounces baby spinach

1 small red onion, thinly sliced

1 small yeallow bell pepper, thinly sliced

6 ounces Stilton or other blue cheese cut into 8 wedges

Preparation

  1. In a small bowl, whisk together vinegar, mustard, salt and pepper; slowly whisk in oil. (Vinaigrette can be made up to 1 day ahead).
  2. In a large bowl, toss spinach, onion and bell pepper with enough of the vinaigrette to lightly coat. Top with cheese.
