Ingredients
6 T olive oil
1/4 chopped Prosciutto
2 T. minced garlic
6 T dry white wine
6 T fresh lemon juice
2 T sugar
1 10 oz bag fresh spinach
2 1/2 cups sliced mushrooms
1/2 c. chopped walnuts (or in your case –none)
1/2 cups grated Parmesan cheese
Preparation
Heat oil in heavy small skillet over medium heat. Add Prosciutto and garlic and sauté 3 minutes. Add wine, lemon juice and sugar and simmer 5 minutes. Season to taste with salt.
Combine spinach, mushrooms, walnuts and cheese in large bowl. Toss with dressing.
