Ingredients

8 slices prosciutto

1/4 cup olive oil

1/4 cup fresh lemon juice

2 tbsp honey

salt and pepper to taste

8 cups washed baby spinach

4 large white mushrooms, cleaned, stemmed and sliced

Preparation

  1. Heat broiler.
  2. Spread prosciutto slices on cookie sheet.
  3. Cook until crisp, 2 - 3 minutes; cut into pieces.
  4. In small bowl, whisk olive oil, lemon juice and honey to make dressing. Season with salt and pepper.
  5. In large bowl combine spinach and mushrooms. Toss with desired amount of dressing. Sprinkle with chopped prosciutto.
