Ingredients
8 slices prosciutto
1/4 cup olive oil
1/4 cup fresh lemon juice
2 tbsp honey
salt and pepper to taste
8 cups washed baby spinach
4 large white mushrooms, cleaned, stemmed and sliced
Preparation
- Heat broiler.
- Spread prosciutto slices on cookie sheet.
- Cook until crisp, 2 - 3 minutes; cut into pieces.
- In small bowl, whisk olive oil, lemon juice and honey to make dressing. Season with salt and pepper.
- In large bowl combine spinach and mushrooms. Toss with desired amount of dressing. Sprinkle with chopped prosciutto.
