Ingredients
6 C Fresh Spinach
1 C Strawberries, sliced
1 C Blueberries, frozen
1 Sm Red onion, thin sliced
1/2 C Pecans, chopped
For the Dressing:
2 T Balsamic vinegar
2 T Rice vinegar
1 T+1t Honey
1 T Curry Powder
2 T Dijon mustard
to taste salt and pepper
Preparation
Wash and spin dry spinach. Tear spinach into bite size. Thinly slice strawberries and red onion. Whip together dressing ingredients. Add dressing to spinach and toss lightly. Add berries, onions, and pecans. Toss lightly and serve on chilled plates
