Ingredients

1 pkg baby spinach

10 raddishes washed and sliced

3/4 cup dried cherries

3 grated carrots

1/2 thinly sliced red onions

1/2 pound scribbed button mushrooms sliced

3/4 cup lightly toasted pine nuts

1/4 cup olive oil

1 T fresh lemon juice

1/2 c pure maple syrup

salt and pepper to taste

Preparation

Wash spinach and drain well. Add all ingredients except pine nuts. This can be made early in the day. When ready to serve, add pine nuts and toss lightly w/dressing. Serve well chilled. Crisp bacon may be added if desired.
