Ingredients

5 oz. fresh spinach

stems removed and washed; 1/2 small vidalia onion

finely diced; 2 red delicious apples

cored and finely diced; 4 hard-boiled eggs

finely diced; 8 ounces sharp

shredded cheddar; mayonnaise to taste (no more than 8 ounces).

Preparation

Remove stems and wash and drain spinach. tear spinach into small pieces. Dice onions, apples and boiled eggs. Add cheese and mix well. Slowly add mayonnaise to taste. Do not add too much. Mix well and refriderate.
