Ingredients
1 pound spinach, washed, drained, stems removed and chilled
1/4 tsp. salt
1/4 tsp. freshly ground pepper
1/8 tsp. oregano
Dash garlic powder
1/4 tsp. dry mustard, or more
1-1/2 Tbsp. sugar
2/3 cup oil
4-6 slices bacon, cooked crisp, drained and crumbled
2 hard-cooked eggs, cooled, then chopped
1 small red onion, thinly sliced
6-8 mushrooms, sliced
Preparation
Measure half the vinegar into a blender or food processor. Add seasonings, including sugar. Blend. Continue to blend, slowly adding oil. Add remaining vinegar and blend. Warm dressing in container set in hot, not boiling water.
Place cut up spinach leaves in bowl. Mix in bacon, egg, onions and mushrooms. Top with dressing. Serve immediately.
