Ingredients
250g Frozen Spinach, Thawed and well drained or fresh spinach wilted in frying pan
250g Ricotta Cheese
50g Fresh parmesan grated
2 eggs well beaten
Salt & pepper
Pinch nutmeg
Preparation
Throughly mix all the ingredients together. Put blobs on tray covered with baking paper or put blobs in small silicone cupcake moulds. bake for 10min, do not brown. Serve with melted butter or pasta sauce and cheese.
