Ingredients
1 T. oil
1 t. ground cumin
1 t. ginger
1 t. green chile
1/4 c. unsweetened coconut
1 large bunch of spinach (or bag of baby spinach)
1/2 c. plain yogurt
Preparation
- Heat oil in pan
- Add cumin, ginger, chile and coconut. Saute until aromatic.
- Add spinach and cook until wilted. Stir in yogurt.
- Take pan off heat and blend mixture until smooth (either in a blender or with an immersion blender).
