Ingredients

1 can ready-to-bake croissant rolls, refrigerated.

1 pint ricotta cheese

1 lb turkey sausage, cooked

1 sm pkg frozen chopped spinach, thawed and squeezed dry.

1 sm pkg cheddar or mozzarella cheese

2 egg yolks, optional, for appearance.

Preparation

Follow temp directions on croissant pkg and preheat oven. Unroll dough and separate triangles. Split them each in half.

Mix cheeses, spinach and sausage well in large bowl. By teaspoon, place mixture in each triangle portion and fold corners up over the mixture.

Brush with egg yolk, if desired. (gives them golden color, more tan if without it)

Bake on ungreased cookie sheet until light brown and puffed. Great as appetizers or snacks for kids on the run!
