Ingredients

12 oz Fresh Baby Spinach

¼ cup Butter

3 tbsp AP Flour

¼ tsp Salt

¼ tsp pepper

¼ tsp garlic salt

4 each Eggs - slightly beaten or Egg Substitute

¾ cup Whipping Cream or ¼ cup lite mayo & ½ cup yogurt

½ cup Parmesan Cheese

Preparation

Rinse spinach well and drain. Saute over medium heat with ¼ cup butter until just wilted. Combine flour, salt, pepper and garlic powder in large bowl. Add spinach, cream, eggs and Parmesan cheese, stirring well. Pour into greased 9-inch pie pan. Bake at 350 for25 minutes or until pie is set. Let stand for 10 minutes.
