Ingredients

600 g washed & trimmed spinach leaves

150 g Pears in syrup

2 tbsp salt

1 tsp bicarbonate of soda

4 tbsp unsalted butter

½ tsp freshly ground nutmeg

Preparation

In a large pot, bring 2 liters of ‘potable’ water to the boil. Add the sea salt & bicarbonate of soda to the boiling water. Add the spinach leaves & remove once the water has come back to the boil. Drain the spinach leaves in a colander & refresh in cold water. Squeeze out all the water from the spinach leaves.

Place the drained spinach leaves & the drained pears into a blender & make them into a coarse purée.

In a saucepan, melt the butter until it is a light nutty brown colour. Add the spinach & pear purée, the nutmeg & a pinch of salt. Stir with a wooden spoon until heated through.
