Ingredients

1 cup orzo pasta

3 tbsp. EVOO

3 tbsp. red wine vinegar

½ tea kosher salt

½ tea oregano

½ tea basil

¼ tea pepper

1 qt lightly packed baby spinach leaves

¼ cup dried tomatoes packed in oil

Preparation

Cook Orzo. In a large bowl whisk oil, vinegar, basil, salt, & pepper. Drain pasta & rinse with water until cool. Add to bowl with dressing and gently mix in spinach & tomatoes (add salt to taste)
