Ingredients
bunch organic baby spinach leaves
1 whole meat only grapefruit slices
skinless mango slices
1 julianned red sweet peppers
1 tbl. sunflower seeds
1/2 c.olive oil
ground pepper
3 tbl.grated aged parmasian
1/2 vinegar
1/4 c.fresh squeezed grapefruit juice
parsley flakes
dried oregano
dried thyme
salt
Preparation
salad: clean spinach leaves in cool water and dry. peel grapefruit and remove the flesh from the sections, clean mango and slice thin off seed.Julianne 1 sweet red pepper thinly, toss together. Dressing: mix olive oil,ground pepper,parmasian cheese, vinegar,salt and grapefruit juice together,when ready to serve pour over salad and top with sunflower seeds.
