Ingredients
9 dried lasagna noodles
1 c. chopped onions
4 cloves garlic minced
2 tblsp butter
1 7oz jar red peppers drained & chopped
10 oz. spinach thawed & drained
15 oz. ricotta
1 c. mozzarella-shredded
1/2 c. Romano or Parmesan cheese
2 eggs beaten
1tsp. dried basil
1 tsp dried oregano
30 1/2 oz. spaghetti sauce ( or 2 jars)
Preparation
Cook noodles In large skillet cook onion, garlic, butter until soft. Stir in sweet peppers–set aside
Pat spinach dry
Combine spinach, Ricotta, Mozzarela, 1/2 c. Romano, eggs, basil, oregano, & 1/4 tsp pepper
Stir sweet pepper mixture into spinach
Layer sauce, noodles, 1/2 sweet pepper mixture and spaghetti sauce. Layer again ending with spaghetti sauce.
Bake covered @ 375 for 20 min, cover and bake 10 min. more. Let stand 10 min.
