Ingredients
500 grams spinach
100 grams feta cheese, crumbled
3 eggs
125 mL of whipping cream
salt & pepper
1 tablespoon butter
2 tablespoons shredded parmesan
2 tablespoons chopped almonds
Preparation
Preheat the oven to 225 C. Butter a gratin pan.
Wash the spinach (don’t dry it!) and cook in a frying pan until wilted. Drain in a collander.
Mix the feta, eggs, cream, salt and pepper in a small bowl.
Chop the spinach and mix it into the cheese-egg mixture with a fork.
Pour the spinach mix into the gratin pan.
Mix the parmesan and almonds. Distribute the mix over the spinach. Place small pats of butter on the top of the gratin.
Bake for 20 minutes
