Ingredients

1 10 ounce package fresh spinach washed well and coarse stemms discarded

4 ounces feta cheese crumbled

1 large egg beaten lightly

1/4 teaspoon crumbled dried oregano

1 1/2 teaspoons fresh lemon juice

14 salrine crackers ground fine in a food processor or blender

2 tablespoons melted unsalted butter

Preparation

In a large saucepan cook the spinach in the water clinging to the leaves, covered over moderately high heat for 3 to 5 minutes or until it is wilted, and drain it well. In a bowl combine the spinach, the feta cheese the egg the oregano the lemon juice 1 1/2 tablespoons of the ground crackers and pepper to taste and spoon mixture into a buttered shallow 2 cup baking dish. In a small bowl combine well the remaining ground crackers with the butter sprinkle the cracker topping over the spinach mixture and bake the gratin in the middle of a preheated 450 degree oven for 15 minutes or until the top is golden.
