Ingredients

8 fish fillets (any white fish)

1 pound of raw spinach

1/2 small onion, chopped

1 garlic clove, minced

salt/pepper to taste

Goat cheese

10 oz. of sour cream

Preparation

  1. Sauté spinach with onions and garlic. Add salt and pepper to taste.Cook until soft.
  2. Place a Tbsp. of spinach and a Tbsp. of Goat cheese on each fillet and roll up. Hold it in place with a toothpick.
  3. In a blender or food processor, mix remaining spinach with sour cream. 4)Place fish in a microwave dish and pour sauce over them.
  4. Cover with Kleen-Pack, prick it two or three times with a fork. Microwave for 6-8 min until done.
  5. Serve with chunky mashed potatoes.

*Goat cheese can be substituted by cream cheese.
