Ingredients
One 10 oz. package frozen spinach,
2/3 T. grated parmesan cheese
3 T. Olive oil
1 clove garlic (smashed)
juice of half lemon
1 egg, beaten
salt and pepper to taste
Preparation
Defrost and squeeze dry the spinach. Place in microwave safe dish. Add remaining ingredients and stir thoroughly. Cook, uncovered for 3 minutes, on high in microwave. Stir, then cover and continue microwaving for another 4 minutes. Enjoy!
