Ingredients
3 pounds fresh spinach
2 bunches green scallions
1/2 cup parsley, minced
1/2 teaspoon dill
1 pound crumbled feta cheese
8 eggs, beaten
1 cup butter
1 teaspoon salt
1/2 cup olive oil
1/2 pound filo pastry leaves
Preparation
Chop spinach. Brown scallions in olive oil. Combine spinach, scallions, dill, beaten eggs, and cheese. Line 5 sheets of filo, brushed with olive oil, in baking dish. Spoon spinach mixture over the top. Bake at 350 degrees for 45 minutes.
