Ingredients

2 frozen packages of chopped spinach (prepared as directed on package)

5 eggs beaten

1/2 of a medium yellow onion (diced)

1/2 cup of shredded parmesan cheese

1tbsp of butter (melted)

2 3/4cups of Pepperidge farm breadcrumbs (the blue label, garlic and herb)

1tbs of garlic powder

1tsp of thyme

1tsp of pepper

Preparation

Cook the spinach as directed on the package and drain well. In a large bowl start combining all ingredients. I would start by mixing the eggs and then adding in all of the other ingredients, including the spinach. Make sure everything is well mixed. Take two sheet pans, lightly sprayed with pam. And start forming the mixture into balls, about the size of a golf ball. I have a pampered chef cookie dough scoop that I use and it works perfectly. They don’t get bigger in the oven, so space them accordingly.
