Ingredients
1/2 cup scallions
1 package of frozen artichokes, thawed and drained rough chopped
2 tablespoons diced shallots
2 packages of frozen spinach, thawed and drained (get out as much of the water as possible)
6 large eggs beaten (or egg substitue)
8 ounces Mozerella Cheese
8 ounces Monterey jack cheese 1/2 cup of grated parm cheese
2 tablespoons dried parsley
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons olive oil
Preparation
Preheat oven to 350 degrees In sauce pan sauté green onions for a few minutes till soft, then add shallotsfor about 30 seconds. In large bowl wisk eggs, parm cheese, parsley, salt, pepper, crushed red pepper, then fold in shredded cheese, artichokes and spinach.
Prepare a baking dish that has been sprayed with oil that would allow the mixture to be about an inch or so high.
Bake until set and slightly browned on top usually about 20 to 30 min.
Cool slightly, cut into squares or triangles etc.
Cool completely then place on cookie sheet in freezer for about an hour, once firm then put into freezer bags and freeze until ready to cook.
I reheat them at 300 degrees for about 10 to 15 min in the oven until they are warm.
