Ingredients
1 T olive oil
2 garlic cloves, crushed
1 lg onion, chopped
1 Bay leaf
1 Celery stalk, diced
1 Carrot, diced
5 C Water or vegetable broth
2 C cooked white beans
1/2 lb Fresh spinach or escarole, chopped
Salt and freshly ground black pepper
Freshly grated nutmeg
Preparation
In saucepan, saute onion and garlic in olive oil over low heat. When onions and garlic are soft, add bay leaf, celery, carrot,salt, and pepper. Stir and saute another 5 min. Add broth or water and cover. Simmer about 20 minutes. Add cooked beans and spinach. Cover and continue to simmer over very low heat another 12 - 20 minutes. Season with salt,pepper, and nutmeg.
