Ingredients

1/4 cup Ginger Syrup

1 bottle sparkling apple cider

1 bottle of champagne, sparkling wine, cava, or red sparkling wine

4 cinnamon sticks plus more for garnish

6 pieces crystallized ginger optional for garnish

Ginger Syrup

2 cups sugar

1 six-inch piece fresh ginger, finely diced

1 cup of water

Preparation

Prepare Ginger Syrup first: add water and sugar to sturdy/heavy stove pot and heat under warm heat till melted.

Cut up ginger into inch long strips and add to sugar water on stove. Simmer for at least 1 hr, stir occasionally and watch to prevent burning.

Let cool before transferring to glass for storage - can be kept in fridge for 2 months

Cocktail: Add cooled syrup, sparkling cider and cinnamon sticks to large pitcher.

Pour in your preferred sparkling wine/champagne and mix.

Add cinnamon sticks to everyone’s glass before serving
