Ingredients

2 Onions, finely chopped

3 tomatoes, finely chopped

1 bell pepper, finely chopped

3 tbsp cilantro, fresh and finely chopped

1 serrano pepper, finely chopped

4 cloves of garlic, crushed

2 tbsp green onions, finely chopped

1/2 tsp turmeric

1/2 tsp cayenne pepper

1 tsp cumin

10 oz tomato sauce

2 15.5 oz cans of black beans

1 tsp salt

1 tbsp olive oil

1/2 tsp brown sugar

4 tbsp lime juice

Preparation

Saute the onions in oil over medium heat until they begin to brown. Add the turmeric, cayenne pepper, serrano pepper, garlic, cumin, and bell pepper and saute for another minute, stirring, over medium high heat. Add the tomatoes and green onion and stir. Add the tomato sauce, beans, lime juice, salt, and sugar, and simmer over low heat for half an hour. Add the cilantro. Serve over Basmati rice.
