Ingredients

16/20 Raw tiger shrimp. (peeled and de-veined)

3 tablespoons of minced garlic

5 slices of chopped bacon

2 table spoons of fresh mint minced

1/4 cup white wine

pinches salt and pepper to taste

Steam Jasmine rice

1 Jalapeno quartered *2 jalapenos if your feeling dangerous.

Preparation

In a rice cooker or on the stove steam your jasmine rice and set aside. In a large Skillet brown bacon pieces set aside 1/4 cup of bacon grease. Add garlic, salt and pepper, quartered Jalapeno and saute until soft w/out burning garlic, add shrimp and remaining bacon grease and cook for 2 minutes, add white wine and cook until shrimp are curled and pink add mint stir and serve over rice.
