Ingredients
1 12-oz package tuna, drained
2 eggs, boiled, shelled, diced
1 medium tomato, diced
1 small cucumber, diced
1 small yellow bell pepper, diced
1 small onion, diced
1 or 2 jalapeno peppers, diced (seeded if you want less heat)
2/3 cup light or fat-free mayo
1 tsp garlic powder
Season with salt and pepper to taste
Garnish with parsley
Preparation
Drain tuna. Hard boil eggs, peel, and dice. Dice tomato, cucumber, yellow bell pepper, onion, and jalapenos. Mix all ingredients together with mayo in a large bowl. Add garlic powder, salt and pepper to taste, and mix again. Chill for 1 hour. Garnish with parsley before serving.
