Ingredients
1 lb grilling steak (can substitute 2 chicken breasts)
4 cups raw spinach
baby carrots
1/2 cup feta cheese
1/4 cup dried cranberries
1 tsp cayenne pepper
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp parsley
1 tsp chopped garlic
Preparation
If chicken, pound to 1/2 inch thickness. Prepare rub of pepper, salt, cayenne, paprika, parsley, and garlic. Dredge/rub meat. Grill for 6 minutes per side. Meanwhile, combine spinach, carrots, feta, cranberries, and walnuts. Slice meat and lay on top of salad. Top with flax seed oil and balsamic vinegar.
