Ingredients

6 oz Egg, liquid

3 oz Turkey, smoked, julienne

1 oz Red Pepper, roasted julienne

0.75 oz Cheddar Cheese, yellow, shredded

0.02 oz Cilantro (1/4 tsp)

0.04 oz Chipotle in Adobe (1/4 tsp)

0.3 oz Butter (2 tsp)

2 Flour Tortilla, 6 inch

3 Tomato Salsa (see sub recipe)

2 Chives, cut in half

1 Oven Cured Tomato Half

Preparation

1 - Heat flour tortilla grill 2 - In bowl blend turkey with chipotle 3 - In non stick skillet saute turkey and red pepper in butter 4 - Add egg and cilantro, when close to done, and cheese 5 - Equally divide among 2 tortillas and secure with wooden skewer 6 - Arrange on plate garnish with chives 7 - Serve with salsa and cured tomato garnish
