Ingredients

2T vegetable oil

1T crushed garlic

1T Sambal(garlic chili paste)

1 lb. shrimp deveined

4T Sugar

2 T tomato Paste

1t ground black pepper

1/3 cup fish sauce

3/4cup fish stock (can use chix or water)

1 large tomato, diced

5 green onions, sliced

2T corn starch

1/4 cup cold water

Preparation

Place oil, garlic, and chili paste in a wok over medium heat; stir fry until fragrant, 30 seconds. Add tomato paste, shrimp and sugar. Toss to combine. Add black pepper, fish sauce, stock, tomato and scallions. Increase to high heat and simmer until shrimp are cooked through and pink , about 2 minutes.Be Careful not to overcook the shrimp. Mix corn starch and water then add to simmering sauce to thicken. Serve over rice.
