Shrimp

chopped white onion

6 garlic cloves

1 1/2 cups whipping cream

1/2 cup white wine

3 splashes brandy

1 habanero

1 orange pepper

can plum tomatoes

cumin

coriander

freeze dried basil

pepper

fresh cilantro

chopped green onions

fresh linguine

Preparation

saute onions with garlic. Add cream, wine, brandy let simmer for a while. Puree seeded habanero and orange pepper. Add to sauce. Add cumin, coriander and pepper and simmer to reduce. Add plum tomatoes and break them apart in the sauce with your spoon. Add freeze dried basil. simmer.

Pan fry the sole. Grill Shrimp and Scallops. Add to sauce with fresh pasta. Add chopped cilantro and green onion.
