Ingredients
1kg pork loin, boned and skinned
1 tspn ground cumin
3 coves garlic
1 teaspoons grated fresh ginger
plenty frehly ground pepper
2 tablespoons soy sauce
1 1/2 tablespoons vinegar
2 tablespoons brown sugar
Preparation
Combine all ingredients , rub all over meat. Bake in a baking dish (not on rack) approx 1 1/2 hours basting frequently. Stand 20 mins cut into thick slices
