Ingredients
1/3 c creamy peanut butter
1/4 to 1/3 c water
2 T soy sauce
1.5 T rice vinegar
2 t chile paste with garlic
1/2 t sugar
1/4 t salt
1 lb medium shrimp
1/4 t salt
8 oz uncooked thick udon noodles or linguine
1 red bell pepper, cut into strips
3/4 c chopped, seeded cucumber
1/4 c diagonally cut green onions
3 T chopped roasted peanuts (optional)
2 T cilantro leaves
Preparation
- To prepare the sauce, whisk together 1st 7 ingredients
- To prepare shrimp, seasons with 1/4 t salt. Saute in a non-stick pan coated with cooking spray on medium heat for 3 minutes on each side until cooked through.
- To prepare pasta, cook noodles according to package, omitting any fat and salt
- Combine peanut sauce, shrimp, noodles, veggies and toss well. Add cilantro and peanuts, if desired.
