Ingredients
1 can (15 oz) chickpeas, rinsed and drained
1 small jalapeno, seeded and chopped
1 large garlic clove, smashed
2 tbsp natural peanut butter
juice of one lemon
1/4 tsp salt
3-4 tbsp cold water
Preparation
In a blender or food processor, puree all ingredients until smooth, adding more water if necessary to achieve desired consistency. Spread on sandwiches or serve with assorted chopped raw vegetables, cherry tomatoes, and whole wheat pita bread.
