Ingredients
4 boneless,skinless chicken thighs
1 packet spicy peanut bake, both inner envelopes
1 tablespoon canola oil
2 shallots minced
1 cup chicken broth
garnish lime wedges, chopped cilantro
Preparation
Preheat oven to 375 degrees.
Pound chicken to an even thickness between wax paper.
Coat both sides of chicken with spicy peanut bake. Roll up and secure with a tooth pick.
In a medium nonstick skillet, heat oil. Brow chicken rolls well on all sides. Place in a size appropriate baking dish.
Add chicken broth and shallots to the skillet. Bring to a boil, scraping up the browned bits in the pan. Simmer for 4 minutes or until slightly thickened.
Pour over chicken and bake for 30 minutes or until done.
Garnish with lime wedges and chopped cilantro.
