Ingredients
2 eggs
1 bell pepper, chopped
1 jalapeno, minced
1 onion, chopped
1 4 oz package asian egg noodles
1 tablespoon curry powder
1/4 cup soy sauce
1/4 cup water
juice of 1 lime
Preparation
Cook egg noodles according to directions on package (probably about 5 minutes). Remove to a strainer.
In the same pot you used for the noodles, saute the onion, jalapeno, and bell pepper. When onions are translucent, add both eggs. (No need to beat them beforehand.) Cook until eggs are done, about 2 minutes. Add water and stir vigorously to mix.
Add noodles and mix well. Stir in soy sauce and curry powder. Remove from heat and add lime juice.
Serve hot.
